Thunderbird clumps together emails in a string, which results in several annoying things. a) You can't immediately see who the latest email is from. b) When you open the string all the emails open up and you then have to close them one by one, which wastes time. c) Thunderbird sometimes clumps unrelated emails into a string, making it hard to track responses and find original attachments to earlier emails wrongly associated. I find all this completely useless and preferred when I could sort by subject line, sender or date. Sooo much easier! How can I go back to that?

From your post I infer that threading is set for the folder. A simple fix for one folder would be - click view in menu bar (if menu bar isn't shown, click alt key first) - then click sort by and tick 'unthreaded'
