Always send from account (email) of recepient (auto - generate mail alias?

I have my own domain with catchall adress. I use seperate mails for each website or service (google@mydomain.de, firefox@mydomain.de, github@mydomain.de). When I want to write an email, I always have to make an alias or adapt the "from" field manually.

Is there an addon or feature when automatically the mail is send from the received adress? Because always adapting it takes a lot of time, making aliases makes is also troublesome (too many adresses).

The challenge is that you need to be sending from an account or alias that ensures a response will reach you. I do not understand why you need to continue creating aliases. Is it that you want a new address whenever you write to a new recipient? If you have a defined number of aliases, you can create those as identities, which is what I imagine you are already doing.

I own the domain, its catchall, so I can ensure a response will reach me.

I continue a new domain for every new registration at a new website to check for their spam. I have maybe 5-10 registrations per months. So 100 Aliases/year.
