Well we can't really stop someone from sending. You can ask them to desist, but that's not always wise, particularly when the sender is a spammer. You would simply be confirming that your address is valid and active.

Spam and junk are two separate things. Junk refers to Thunderbird's own built in junk classification system. It doesn't use rules or blacklists; it simply learns by example what you like and what you don't. Keep marking bad messages as Junk, and good messages as Not Junk and it will eventually learn. It's not a quick fix, and it may do no more than mark messages. It certainly won't stop them from being sent.

If you are seeing the word Spam, then something or someone else is also screening your incoming email. This is most likely your ISP or email provider and you need to visit their website and look for what they offer in the way of adjustments if you need to change what it does. Alternatively, you may have your own security software that intercepts your incoming email but this is likely to label your Spam, not move it into a specific folder.

I'm not sure what to say about you losing sight of your Junk folder. You should have a narrow pane, usually at the left, where your accounts and their folders are listed. All of your Junk folders should be visible here. If your accounts are set up appropriately, you should also see any Spam folders here. There is a possibility that your email provider operates a Spam folder for you but you can't see it in Thunderbird. Again, a visit to their website is called for to check this.
