i would like to set the items in my bookmarks' tool bar in an a-z order.

when i click "views" and "sort," i select the sort order, and then go to the bookmarks tool bar, which is not sorted by a-z--it's a jumble of names without any order, a-z or name.

Sorting via the Views menu in the Library only shows the bookmarks in the chosen sort order and doesn't change them permanently (hence the Views name of that menu).
Clicking on the header does the same.
If you want to sort bookmarks then you need to right-click a folder and use "Sort By Name" to sort that folder.
You can't sort individual bookmarks, only folder can be sorted that way.

one more question: what is the sidebar, and its function? is it necessary and, if not, can i delete it?

You can open the bookmarks in the sidebar to have them visible for as long as you keep that sidebar open.

You can toggle the Bookmarks sidebar on/off via "View > Sidebars > Bookmarks" or Ctrl+B You can toggle the History sidebar on/off via "View > Sidebars > History" or Ctrl+H

Press the F10 key or tap the Alt key to bring up the "Menu Bar" temporarily if the menu bar is hidden.
