Every so often, I suspect during updates, the three mentioned search engines add themselves back to my search engines list.

I always remove all search engines but my preferred one immediately as I hate that hovering over another search engine and pressing enter triggers a search on that engine.

Unfortunately, they keep coming back and I find myself repeating this process often.

Are you updating Firefox, or using the full installer? The installer would rebuild the search engines.
