My reply emails are filled with odd characters and can't seem to remedy the problem
Had to reload Thunderbird after a computer crash and now it seems to be doing odd things. When I reply to someone's email, my reply shows up (to them) with what looks to be all sorts of html codes offset in brackets (i.e.,
, <head>, etc.) throughout my message.

Maybe the folder in which the messages that you reply to are, is corrupt. Right-click on the folder and choose Properties. Then choose Repair Folder from the dialog screen.
