URLs are not showing as clickable links.
URLs are just showing as Text, not a clickable link.
How can I correct this?

If you are composing an email in a Write window, then the added url will look like text at this point because it is easier to edit. This is normal.
If you save as a draft and then check the saved draft, you will see that it should have changed to a clickable link. So the message you send will send with a url as clickable link.
No it's incoming email that its not showing as a clickable link, just text?
In the source code a link is contained in a
< a href = link text and closed with a < / a >
Select email and clickon 'More' > 'View source' to see the code. Was the link sent correctly with that code.
What version of Thunderbird are you using ?
78.1.1 Just downloaded to try it.
Also It didn't bring over my folders from MS365 which makes Thunderbird not useable.
I guess I'm stuck with Apple Mail.
I presume this is an imap account, is the mail account itself still there so allowing you to subscribe to see folders?
- Right click on mail account and selct 'Subscribe'
- click on 'Refresh'
- Select folders and click on 'Subscribe;
- Click on Ok
Or do you see the folders as well, but they lack content? See if this requires a repair.
- Right click on folder and select 'Properties'
- click on 'Repair folder'
- Click on OK
