SOLUTION :
1) Open a new tab
2) In the address bar type "about:config" without quotes
3) In filter search for "pinch"
4) Modify your string value (that are empty) like that :

    browser.gesture.pinch.in             -> cmd_fullZoomReduce

    browser.gesture.pinch.in.shift   -> cmd_fullZoomReset

    browser.gesture.pinch.out          -> cmd_fullZoomEnlarge

    browser.gesture.pinch.out.shift -> cmd_fullZoomReset

5) Restart Firefox
6) Now you have pinch to zoom
