I have the Library open, and click on a Bookmark in "Unsorted Bookmarks."

. . . It opens in the Tab in the browser that I currently have open, like my e-mail

press ctrl+B to open the bookmarks in a new tab .

Ctrl+B works with the browser open . . . but just opens the Sidebar Bookmarks

From the Library / Bookmarks . . . when you double-click to open a Bookmark, how do you get it to open in a New Tab? It opens in the current tab that you have open, and you might not want it to leave that page.

The only way I see right now is that, before you go to the Library, open a New Tab, then when you click on the Bookmark, it will open in that Tab.

Besides right-clicking a bookmark and using Open in a New Tab, you can middle-click the bookmark to have it open in a new tab.

Ctrl + Click also works.
