While Thunderbird can SEND messages, it cannot write to the SENT folder afterwards:

"...you may have exceeded the maximum number of connections..."

Default setting is 5. What should I set this to?

that depends on the number of other devices you have accessing your mail. but try 1. It will of course probably be slower
