When viewing the message in the message pane or a tab there is a star at the right end of the address. If the star is filled with color it is already in one of your address books. If the star is unfilled, clicking it will add it to the Personal book. Clicking a filled star opens the contact edit dialog.
Install the MoreFunctionsForAddressBook add-on, then right-click any recipient in the Header Pane, 'Save recipients addresses'/'as contacts' or 'as list' to save in an address book or as a mailing list.
