How do I find and change my HISTORY settings so they save my history from previous days. Right now I can only access today's history and then it disappears.

Go to your options window (from the Tools menu, or the orange Firefox button) and select the Privacy tab. From there you can change your custom history settings. I'll attach a picture to illustrate what I'm talking about.
It sounds like unchecking 'Clear history when Firefox closes' will help you.
Make sure you are not clearing them.
