Apple Mail tells me the folders I wish to import are to be found in ~/Library/Thunderbird/Profiles/, Finder will not return that file when I attempt to search for it.

Mail is probably looking for the profile folder, or one of its subfolders, and the easiest way to find it is from Help (or AppMenu/Help)/Troubleshooting Information, click Show Folder to open it in Finder.
