I haven't been able to filter out unwanted email messages. How?

I made a filter called Block List. The action to be taken is to delete the messages on receipt. To add an emailer to the list, I click on an unwanted email and click on "reply". I then copy the return email address and paste it into the filter. As an example, I'm 73 years old and have been married for 41 years. I don't want anything about "dating". I filtered it (match.com), using the method I described, but still get the emails. On support I tried the method of right clicking on the address to create a new filter, and that did work but I don't want to have to create a new filter for each message. Why can't I make a list and keep adding more addresses that works?

PS I have used the + to add addresses that I have copied using the reply method but they dont' work.

Do these messages really come from match.com? I get a lot of stuff that claims to be from paypal or even a reputable bank but inspection of the message's headers usually tells a very different story.

I have one here that says it comes from iTunes, but the sender's email address is on cox.com. Furthermore, a link in the message would take me to somewhere that has no connection with iTunes or apple.

Are there any other aspects of the message that could be usefully used in a filter? Subject line?
