How do you recover from that? Is there a link in the page to use a desktop layout?

Usually sites do not use a mobile or tablet layout for desktop/laptop computer browsers; they recognize the user agent string as identifying a computer. Sometimes, though, if you have zoomed in a lot, the site with a "responsive" layout might use a mobile-style layout because it thinks that makes the best use of limited space.
