Please check to see if the Windows OS default 'app' mode which when selected in interfering.

Do you have the 'Windows OS' Light mode selected for the 'default app mode'? Settings > Personalisation > Colours

What happens if you select 'default app mode' as dark? Does it fix the issue in Thunderbird ?

Setting the Windows app mode to Dark makes the TB Home Page, and Threads and Folder Panes dark, no matter what the TB theme is, but it doesn't make the Options tab or Add-on Manager dark. It takes a bit of time to figure out all the possible combinations.
