I wan to reply to an email and be able to edit their original text in a different colour. This will make it much easier and clearer for them to understand the answers. I can't find out how to do this.

Hello,

Right click on the message and select Edit as New Message, but I think you are able to edit the original text clicking in Reply, just select the text and make your changes.
