how can we restore sent items
We had to do a system restore on a Windows 10 machine. Unfortunately this deleted thunderbird and although have since downloaded and can now view inbox with all historic incoming emails - all sent items appear to have been lost.
Is there any way of retrieving these?

Depends upon what type of mail account you used. If prior to doing a 'system restore' you used an Imap mail account, then all emails should still be on server. So re-creating an Imap mail account should give you access to all folders and emails, but you would need to subscribe to see them.
If you used a POP mail account, then all emails would have been saved on your computer. Creating a new POP mail account would give you access to anything left in the server Inbox. It sounds like you have created a POP mail account as you would only get access to server Inbox.
Make hidden files and folders visible.
Your Thunderbird Profile is stored in this location:
- C:\Users\<Windows user name>\AppData\Roaming\Thunderbird\Profiles\<Profile name>\
'Profiles' folder will contain your 'profile name' folders. 'Profile name' is called 'xxxxxxxx.default', where the x's are letters and numbers. How many 'profile name' folders do you see? Post an image which shows the contents of the 'Profiles' folder.
Go up directory to the 'Thunderbird' folder. It will contain 'Profiles' folder and 'profiles.ini' file. Open the 'profiles.ini' file using 'Notepad. Post image of contents
Did you create a backup of the profile name folder before doing a 'system restore'?
