I have Acrobat correctly installed on my MacBook. I can save pdf email attachments, and then open them correctly. But if I try to directly open a pdf attachment from Thunderbird, I get a dialog box asking for my Acrobat product serial number. If I don't provide it, Acrobat closes the file. What is going on here?

try removing the pdf file type in the attachments tab in options. see if that helps as opening the next PDF will redefine the action.
