Recipients cannot see my e-mail adress in the header, the field is just blank.

Although I have given all information in the account details, I hear back from recipients of my e-mails that there the "from" field in the header of the received e-mail is just blank. See screenshot attached below.

right click the account in the folder pane and select settings. check that the account name, Your name, and the email address are correct.

If they are close Thunderbird, hold the shift key while starting Thunderbird and continue in safe mode when prompted. Does this error occur with all add-ons disabled?
