In a new 'Write' message window. Make sure the 'Contacts sidebar' is enabled. 'View' > select 'Contacts Sidebar'

Select the appropriate Address Book, if unsure select 'All Address Books'. If you want to see more than 'Name', enable the 'Email' column. click on small icon to the right of the column header - see image below. You can make the width of the Contacts sidebar wider by hovering over the side edge and when you get the double headed arrow left click hold down and drag - as shown in image.
