I am looking to change an option setting to move old messages to a single folder. Or if there is a way to hide a single folder in the folder heirarchy displayed.

Chosen solution

usually grey means not available. In the case of archive it is usually because the archive setting is set to "other" as that is the top level option the lower level options do not exist. for other

In the case of gmail IMAP accounts, other and setting to All mail is the setting that does not fight with the gmail server.
