I can't duplicate that with 73b1 on W10; the compose boxes show white text on a dark background. Does it look different in safe mode? Hold Option when you launch TB. The Dark, Light and Default themes can still be selected in safe mode.

There may be an OS X display or color setting that affects TB's colors, as happens on Windows.
