I hope I can help but please appreciate that this is a more complex solution than we would normally provide. This is what has worked for me:

In the address bar, type:

about:config

In the search field, search for:

network.trr.bootstrapaddress

Select the empty field under the title and enter:

1.1.1.1

Now search again for:

network.trr.mode

Change the mode to 2 (if you want a non DoH route taking if DoH is not available) or 3 (if you want DoH set regardless).

Please appreciate that this is not commonly set for mobile and, unlike desktop, we do not have a nice menu option available to set this up. Please use at your own risk, DoH is not yet fully implemented or tested on mobile.
