Bingo! cor-el's first link led me to the problem: on Windows 7, Tools > Options > Content > Colors had "Allow pages to use their own colors, instead of my selections above" unchecked, whereas on my XP machine (from which I copied my Firefox profile), that option is checked. So...transferring the profile to my new machine somehow managed to uncheck that option. Hmm...
