One of your options is to disable web sites to track your movements ad provide ads. Is this the same as cookies? If I activate tell websites to not track, will that disable all cookies, and thus restrict surfing?

Selecting the "do-not-track" setting will only make Firefox send a specific HTTP header (DNT=1) to a web server.
It is up to the server to do something with that request.
