If you go to the "Bookmarks" section of the "Awesome Screen" then you can press and hold on a bookmark to edit or remove it.

There's currently no way to sort or move bookmarks in Firefox for mobile. If you have Firefox Sync set up, then you can use the bookmark manager on your computer to organize bookmarks inside your "Mobile Bookmarks" folder, and those changes will by synced to your Android device.
