I can't figure out how to find old versions of the default theme for Thunderbird. Searching for things like "thunderbird default by mozilla" didn't bring anything relevant to the top of the results. Where are old versions of the default themes kept, for use with later versions of the program?

Thunderbird uses whatever default theme comes with that version. Thunderbird 68.1.1 does have two options , a light and a dark theme.

You can look for a theme but ensure it is designed to work with current Thunderbird. Some are not compatible as they have not been updated. https://addons.thunderbird.net/en-US/thunderbird/complete-themes/?page=1
