Nearly all my email folders have a < next to them also some of my folders have disappeared

I think you mean a > and if you click on the > you will expand the list to show the folders that are collapsed under the one with the >
What Matt said, but if this has taken you by surprise, it could be that you're used to All Folders view and switched to Unified Folders view:
