I just installed Foxfire. I like it very much and want to keep it as my permanate browser. My question is can I remove Internet Explorer 8.

No. I am not sure that IE can be totally removed from Windows XP. As I recall, it is interwoven into the XP operating system. Removing IE8 in Control Panel > Add or Remove Programs will simply back up to the previous IE version until you end up at IE6 (full of security issues). If that is the case, it is best keep IE8 on your system. If you ever need to do manual updates for Windows, you will need IE to do so.

You can change your default browser to be Firefox:
