Oddly I've not seen this exact problem on the forums.

I occasionally delete unknown notes from my inbox. This seems to happen when I leave the focus on an item deep in my inbox and scroll to the top and think I've selected the first item in my inbox and hit the delete key. I expect the first item in my inbox to disappear but instead, whatever note had focus deep in my inbox apparently is deleted. I don't know what note it is, but I'd like to undelete it.

I've read elsewhere here that Ctrl+z might work, but as far as I can tell, it doesn't. (It's difficult to be certain when there is no feedback letting me know that an undelete was done or what was undeleted.)

I know Lotus Notes supports this because it stores the "deletion date" of every note in the Trash folder, so it's easy to sort the Trash folder on this field and find out what was just deleted. I don't see that in Thunderbird.

What do you suggest?

Pay attention which message is selected prior to hitting the Del key.

Inbox is not meant to permanently store messages. You could organize your messages in folders, and keep Inbox as tidy as possible.

You can restore messages from Trash by drag and drop. If Trash is another storage facility of your's, it isn't meant to be.

You can raise a feature enhancement bug in Bugzilla for including the 'delete date'. https://bugzilla.mozilla.org/

Somebody else may have done that already, therefore search Bugzilla prior to raising a new bug.
