When I start to type a contact's name in the "To:" field of an email, I get suggestions for contacts that are no longer correct. Some of these are for old email addresses to current contacts. I cannot find these incorrect emails in my contacts, they only show up as suggestions when I am in an email "To:" field. How can I delete these incorrect email addresses?

All these suggestions do come from your Address Book. If you think they don't then they are being found in an address book you don't know about, or are filed as secondary addresses.

I suggest you create a new message and address it deliberately to some of these obsolete addresses. Save the message as a Draft and close it. Then view it in the Drafts folder, where the addressees will appear in the message's header next to yellow stars. You can click each of these stars to see a summary of the Contact and there is an Edit button which will take you to the address book entry where you can remove or correct the old email address, or you can just delete the whole Contact record.
