There is no 'undo' button and if I accidently deleted an email and did not note which it was, once it goes to the Trash I cannot go retrieve it....

I have Edit|Undo on my menu. I suggest you enable the traditional menu.

F10 or alt then View|Toolbars and tick the checkboxes.

The menu will also show you the standard keystroke ctrl+z for undo.
