I have five email accounts. The newest seems to record (save) duplicate copies of each sent email sent in the "Sent" folder. The recipient only receives a single copy. My copies and folders setting are no different than any of my other accounts. "Place a copy in Sent items on xxx email". The only thing different from my other accounts is that this email is to an outlook.office356.com server, on port 993.

With gmail and outlook.com or office365 accounts, and maybe some others, sent messages are automatically copied to Sent, so you should uncheck 'Place a copy in'.
