Is there no way to turn off filters?
I've tried everything, including setting it to filter an empty folder instead of my inbox. But it still defaults back to filtering the inbox every time it restarts. I'm trying to stop filtering to debug why my email keeps hanging. I have 800 filters so I don't want to uncheck 800 boxes. There should be an option to turn off filtering temporarily, or to uncheck all the boxes at once.

Message filters can seriously damage your email's health. Turning them off all at one time. I do not think this is a option? Delete them all is a option.
Your incoming mail is a another story. Do you have some Smtp messages from Thunderbird that something might be wrong? Or is it that message do not appear of the settings off junk mail filters?
any indication that it could be this? Junk filters are there to fine tune and you have to weigh them yourself a bit to get started with them there are quite a few you use?
Turning off the adaptive junkmail control for your account. Will be better to receive your missing emails.

My problem isn't junk filters. My problem is message filters where I move messages from my inbox into folders. But lately my TB is hanging constantly so I am trying to minimize mailbox activity. I want to turn off the message filtering without having to uncheck 800 boxes. So I set it to not filter the inbox but instead filter an empty folder. The change doesn't stick and it goes back to filtering the inbox. I am only keeping brand new messages in my inbox, like 20 or 30 at the most. But it still hangs when I try to look at a message.

Are you using firewall software to?
You re asking for a option to turn of the message functions temporary? It also can be that your options are not working how it s suppose to be. Did you check your junkfolder? Does messages go there when they are normally belong in your inbox?

Microsoft Defender but I set it to ignore my Thunderbird profile folder.

You can try this if it s possible. You go to menu Options > Account Settings. Choose your account > Junk messages and uncheck "self-learning

Do you have other software running like spam checkers?
Are you having a lot of add ons like you are having all your filter settings?
Does the issue disappears when you are using safe modus for Thunderbird? I can send you a form of it.

It looks like you have to uncheck all you’re 800 boxes. There is no on off switch for this sort of questions.
Also take a moment to react on the freezing moments of your pc and inbox or Thunderbird moments. Try to impact the situation before it s going to get to a continuous not solving problem with your pc or software that s installed.

Thunderbird safe mode doesn't work but I was told to try OS safe mode and I can't do that right now. I don't have an ethernet cable where I am.

Do you have a desktop ? With Ethernet cards? Or having A mac with the possibility to run Os safemodus?
The safe modus for Mac is a way to startup your Mac with different scanning modus that find place.besides that it it s prevented that some software is automatically will be loaded or installed or getting opened and other devices won’t be activated.
You do not need a Ethernet cable for it right away. Do you think that is saving your pc?
My advice is clean your complete Mac and stop with the filters. Try ccleaner it cleans up the pc.

Power on or restart your Mac, then immediately press and hold the Shift key as your Mac starts up.
Release the key when you see the login screen.
Log in to macOS.
I saw your other issue with the beta version installation. Is that issue still there? Can I ask? It looks like more things went wrong with the Mac?

for the problem that you are using a beta version i advise you to install a full version of the software i will send it to you so that it will be fine again with the version that will update itself on your machine and the beta version will disappear .
the settings will also recover. regarding the folders you have shared on you will have to use them again
