Windows 7 has gone sideways on me and needs to be nuked and re-installed. How can I back up all my saved emails so I can restore them in the new Windows and Thunderbird installation? I've backed up my profile, but I want to be sure that ALL of my local folders with saved emails are backed up, too; I've got a lot of legal correspondence in several folders that would be an utter disaster to lose! Thanks for holding my hand here!

In the default configuration, your profile contains all this data. If you have changed any of the default Local Directory settings in your account settings then only you know where your data is.
