Thunderbird 91.2.0 comes with a new integrated PDF viewer. This might be nice for some people, but I'm using Acrobat Pro along with other editors and designers to comment PDFs. I want my PDFs to open in Acrobat.

Answering my own question: Tools > Preferences > General > Files & Attachments, find PDF and choose the app you want to use for PDFs. Shoulda RTFM.
