Saw a similar question on this thread -- https://support.mozilla.org/en-US/questions/1257290 -- But I am unable to find Options under the Tools menu bar setting on my MAC. Is it something different? Where do I find the default editor? And, what is the correct Font and Encoding? This issue just started recently on my MAC.

Thank you all.

Hello shadoggy,

I'm a Windows 10 person myself, but I think that "Options"
on Mac is "Preferences" ......

So, where I say "Options" - try "Preferences":

Go to the Configuration Editor (Tools, Options, Advanced, General, Config Editor).

Scroll down to mail.strictly_mime Click on it and change it from "false" to true.

Does that work  ?

I'm so glad it worked  !

I usually work on the Firefox support forum, and there we sometimes get questions from Mac users about how to get to "Options".

I figured it would be the same here on Thunderbird support .....
