I understand that updates are important as they generally include some kind of security upgrade, but I have found that when I go to update, some of the add-on's won't work. How long does it normally take for new versions of Firefox to adapt to new add-on's?

It is up to the developer of each add-on to adapt it to a new version of Firefox, not the other way around.
