Firefox has an old email in system...how do I fix?
Firefox keeps wanting to send email to old email account for syncing purposes...
How do I make sure Firefox has my current/correct email going forward?

Are you referring to the email address that you used to setup your Sync account?
You can't change the email address used for Sync as it is the Username for your Firefox Account / Sync service.
I suggest that you disconnect from Sync in all your Firefox installations / Profiles and setup a new Sync account on your main device. Let that Firefox installation sync and then slowly connect your other installations / Profiles to the new Firefox Account.
