Firefox doesn't use the term "favourites", they are known as bookmarks (as with most other web browsers other than IE).
The Library window Views menu item for "sort" is temporary; close the Library window and the "sort" goes away.
Please see this support article: https://support.mozilla.org/en-US/kb/sort-bookmarks-quickly-find-ones-you-want
"Sort By Name" is available in the left pane of the Library, but it is folder-by-folder for each 'branch of the tree'. IOW, the folders below the folder that the user is sorting isn't affected by the sort, each folder is independent of the folder it resides within.
There are other things that need attention.

Sort in the Views menu is similar to clicking a column on the header bar to sort the list by this column. Real sorting is only possible in the right-click context menu of a bookmarks folder (Sotr By Name) as posted above.
Are you possibly using Sync to sync the bookmarks?
