Can I use Thunderbird Address book as a customer database
I downloaded Thunderbird about a week ago and exported my Outlook database into the address book.
I now have a few questions.
I now use Outlook as a customer data base I would like to see if this is possible with Thunderbird.
All of my Outlook folders were exported however, they were all exported into a single "Contacts" folder. I now have my Customer information filed in about 20 different sub folders in a contact file on Outlook.
1. Is it possible in Thunderbird to create sub folders?
2. The "notes" were shown in the "other" section. However, not all of the "notes" information was exported - Why?
3. I would also like to be able to export the information to my iPhone 7.

What do you want from a "subfolder"?
Thunderbird's Address Book supports Mailing Lists which look like subfolders, but a Mailing List can only contain Contacts held in its parent address book.
The intent of Mailing Lists is that a List can be used as a portmanteau; its name stands in for all the contact addresses it contains, making mass mailings easier to set up.
You can however create multiple independent address books, which can be useful to keep similar Contact types (e.g. personal vs business vs social groups) separate from each other.
I have to warn you that Thunderbird's Address Book does not lend itself to easy use for other purposes. It is intended to manage all your email contacts, but doesn't offer tools for, for instance, creating address labels.
I can't comment on your two other queries.

For points 2 & 3:
You may have better results with the notes if you export the Outlook contacts to vCard files and then import them to TB.
Export a TB address book to a vcf file (Address Book, select an address book, Tools/Export, Save as type: vCard (vcf). Import to the iPhone according to these instructions.
