Left PC on standby. When waking up, found Thunderbird had 'reverted' to a 'blank' state (sorry. Can think of no other words) without any accounts, add ons or skins.

Reinstalled. Pointed it to the path: [General] StartWithLastProfile=1

[Profile0] Name=default IsRelative=0 Path=C:\Users\Stephen\Dropbox\Thunderbird\9svecbyf.default Default=1

Then deleted the 'Thunderbird' directory in 'C:\Users\Stephen\AppData\Roaming' as I did before. However each time I restart Thunderbird it defaults back to the 'C:\Users\Stephen\AppData\Roaming' and assumes it's a fresh install.

Duh...sorry. Edited the profiles.ini file in the C:\Users....Appdata...Roaming. Fixed it. Lost nostalgy and the skin...but not matter. Apologies for wasting anyone's time.
