When I get emails containing characters with diacritic signs such a é, è, ö, they are transformed into other symbols such as @

I'm not an expert on this, I hope that someone else who knows more can help you. But I suspect that the solution lies with the encoding scheme used for your incoming mail. If you go to Thunderbird Preferences > Display > Formatting > Advanced you'll see the scheme your system uses: in mine it's Unicode (UTF-8). However there are many alternatives, as you'll see if you click on the drop-down arrow. Maybe one of the others will give you better results?
