I have both email accts open and visible in the thunderbird AP screen. I selected emails from a folder in one account and, using mouse, dropped them into a folder in the other account. But those emails were deleted from the first account. I just want to copy them, not "move" them.

If dragging and dropping on the same drive the default action is to move. Holding the control key when doing it places a + sign beside it indicating a copy. If dragging and dropping to a different drive the default is to copy. Holding the shift key switches the operation to move. This is referring to physical drives not folders. Doing this inside Thunderbird would be the same drive, different folder.

You can also right click the items and use the Move To or Copy To menu items. This is sometimes safer than accidentally dropping in the wrong location.
