Alright - I've got some accounts set up to store locally (IMAP server). (at least I think - this is probably the most confusing feature... I want the local storage to be "permanent until deleted" - but I only want to keep 30 days on the imap server. I cannot for the life of me figure out how to do that??

If you think of any local storage of IMAP mail as a cache you will get on a lot better. Because of the synchronized nature of IMAP there is no such thing a a local copy you can expect to be there in your archive.

So based on that you can not have local copies that do not exist on the server.

POP is the protocol that offers local copies and an option to automatically delete messages on the server after a fixed time.
