Firefox for Android does not have a UI to organize bookmarks.

You can use Firefox Sync to organize mobile bookmarks on Desktop Firefox. https://support.mozilla.org/en-US/kb/how-do-i-set-up-firefox-sync

I'm a newbie to Android, but a long time Firefox user on Windows. Was hoping to use FF on my tablet, but like the poster I use bookmarks extensively (~1900 currently). Without being able to organise into folders it is unusable.
