I sent myself a google form within an email from web-based gmail. I tried to fill in the fields within the Thunderbird received email but was unable to activate (by mouse click) any of the fields in the form and thus was unable to type in any information

I haven't tried this in (eg) Outlook.

If the "form" is based around javaScript, then that would be expected. For security reasons Thunderbird does not execute any scripts contained in emails. Makes getting mail delivered malware significantly harder.
