Every time Firefox updates, it tells me that my add-ons are not supported and that they will be disabled. Is it possible to be told this before Firefox gets updated, so that I can choose to stay with the old version of Firefox until my add-ons are supported?

Your Extensions rather may just simply be older versions as they may likely have had one or more updates since. Just check for updates or check at addons.mozilla.org or its homepage.
