can't see text in web pages and colors panel of options
can't change text or background colors as links aren't visible or missing in colors control panel

Are you possibly using a High Contrast theme in your Windows OS?
Make sure you haven't enabled a High Contrast theme in the Windows/Mac Accessibility settings.
Make sure you allow pages to choose their own colors.
- Options/Preferences -> Content : Fonts & Colors -> Colors : "Override the colors specified by the page with my selections above"
Try "Never" if the default "Only with High Contrast themes" isn't working.
This setting affects background images.

Not a techie so I just try solutions that might work. High contrast not the issue. I had accidentally made both my background color and text color white which I couldn't change as that made content color panel invisible. The solution came after the 5th uninstall / reinstall and then clicking Refresh Firefox button and restoring original defaults. Back to normal. Hope this helps others.
